Vineyards: Planted in 1953 at 4000 vines per ha; on a deep red volcanic soil. Training system; bush
Winemaking: This old vineyard produce not more than 6 grapes per vine for a total yield of 20 Hl / Ha. Grapes are hand picked and selected; fermented in concrete tanks at temperatures kept below 25 °C with frequent pigeages. After 10 days of maceration Cirsium is racked in barrels of different ages where it does malolactic fermentation. It then ages for about one year in a big oak cask and is bottled with no filtration. It rests a couple of years in bottle before market release
