Winemaking: Gentle crushing and de-stemming of grapes. Prefermentative maceration. Alcoholic fermentation conducted at temperatures kept below 25 °C in small stainless steel tanks for 7/8 days. Ripasso on Amarone skins. Malolactic fermentation until completion in steel. Batonage on own yeast in steel .
Ageing: 12 months in steel; 12 months in bottle.
Total Production: 6000 bottles
