Winemaking: Grapes are hand picked and selected, gently pressed with basket press; fermented by means of solely native yeasts in concrete vats at temperatures kept below 17 °C. Cassiara ages sur-lie for 6 months with frequent batonnage. 3 months in bottle before release
Ageing: 6 months in concrete vat
Total Production: 3000 bottles
Commentary: This delicious white offers a wide range of wild herbs and spices hints supporting a very fresh and tonic fruit. In the mouth is crisp and refreshing, yet luscious and smooth.
