||Picked by hand in small 20kg cases. Selection of the berries using a selection table. Destemming, fermentation with indigenous yeasts in 25hl. Slovenian Oak tanks. Pumped over daily for three weeks, followed by malolactic fermentation and ageingin new oak barrels. Ageing period around 15 months. Not clarified or filtered.
