Winemaking: Grapes are hand-picked and selected at aromatic maturation in small cases. Soft pressing. Fermentation at temperatures kept below 18 °C. Ageing sur-lie for about 1 year in steel tanks
Ageing: 1 year in stainless steel vats, 1 year in bottle
Total Production: 3000 bottles
Commentary: a medium-to-full bodied Greco with layers of yellow fruits, wild flowers, licorice roots and a slight mineral vein (petroleum, kerosene...) that developes with bottle ageing. Probably the best Greco I have ever had.
